The cucumber is an amazing power packed veggie that doesn’t get as much credit as it probably deserves. In light of the WARM WARM weather we are having today, I was craving something that was cold and crisp!

What makes a cucumber so special?

It’s 95% water which hydrates the body and flushes toxins
It’s rich in potassium and magnesium to lower blood pressure
It contains vitamin A which helps fight cancer and maintain healthy blood cells
Helps in digestion from it’s high fiber and water content
The skin of a cucumber is 10% of your daily recommendation for vitamin C, which in turn is great for YOUR skin!
It’s high silica content also helps your skin’s healthy glow!

Try this fun healthy snack! I love taking this on the go. In high school, long before I knew what healthy eating was, I used to take this to the beach over the summer! Nice and cold while I lounged in the sun!

Ingredients:
Sliced COLD cucumbers
Juice of 1/2 a lemon
Organic Chili Pepper seasoning

Method:
1. Combine cucumbers, lemon and desired amount of chili pepper seasoning.
