We received some amazing squash and zucchini in our organic produce box last week.  Due to a new intense workout routine I was craving something hearty!  I ended up making this dish mighty spicy, which was probably a good thing, revved up my metabolism for a mighty carbohydrate meal!

Ingredients:

1 serving of your pasta choice
1 tablespoon of olive oil
1 sweet onion
1 can of fire roasted organic tomatoes
2 zucchini
2 yellow squash
1 can of organic white beans
red pepper to desired spice level

 Method:

  1. Prepare noodles as directed on the box
  2. Saute onion in olive oil on medium heat. Add red pepper flakes
  3. Add chopped zucchini, yellow squash and tomatoes
  4. Add noodles and white beans stir and serve hot

I told you it was easy!
