We received some amazing squash and zucchini in our organic produce box last week. Due to a new intense workout routine I was craving something hearty! I ended up making this dish mighty spicy, which was probably a good thing, revved up my metabolism for a mighty carbohydrate meal!
Ingredients:1 serving of your pasta choice 1 tablespoon of olive oil 1 sweet onion 1 can of fire roasted organic tomatoes 2 zucchini 2 yellow squash 1 can of organic white beans red pepper to desired spice level
- Prepare noodles as directed on the box
- Saute onion in olive oil on medium heat. Add red pepper flakes
- Add chopped zucchini, yellow squash and tomatoes
- Add noodles and white beans stir and serve hot
